Vegetable Korma

Method of Preparation:

  • Add all the ingredients for the masala into a blender, blend with sufficient water to a smooth paste. Keep aside.
  • Heat Oil in a wok on medium high, toss in the onions and curry leaves, fry for 4 min until soft.
  • Add the tomatoes and the turmeric powder and stir fry for a further 5 min or until the tomatoes are soft.
  • Add the ground masala paste and fry for a further 5 min.
  • Turn the flame to a low, when the oil starts leaving the sides of the pan. Now toss in the diced vegetables and mix well to coat evenly.
  • Add sufficient water to cover the vegetables, season, cover and simmer for 10 min.
  • Once the vegetables are cooked spoon in the yogurt stirring well. Simmer this for a further 3 min.
  • Serve garnished with the chopped coriander and serve with chapattis or pooris.
