Method of Preparation:

  • In a large wok heat the ghee over medium high.
  • Once hot toss in the onions and stir fry for 5 min until golden brown.
  • Add the whole dry spices as well as the dry spice powder and stir fry for a further 2 min.
  • Toss in the tomatoes and cook until soft and mashed well. This would take about 5 min.
  • Drop in the lamb, sufficient water and the yogurt, season with salt and bring to the boil. Cover reduce to a low and simmer for 45 min to an hour or until the lamb is soft and tender. Stir occasionally so as not to burn the curry.
  • Once the lamb is cooked, reduce to ensure a thick sauce, garnish and serve with naan or steamed rice.
