Method of Preparation:

  • Heat the oil in a skillet over medium high. Toss in the duck and fry until the meat is well brown, remove and set this aside.
  • Drop in the whole dry spices in the same oil and fry for a min or two.
  • Add the onions and stir fry for about 5 mins until they turn a medium brown color.
  • Add the ginger garlic paste to the browned onions and fry until well cooked. This would take about 30 sec.
  • Add the dry spice powder to this and fry well for another 30 sec.
  • Drop in the browned meat to this along with all its juices. Stir fry for a min until well coated with the masala seasoning with salt and pepper.
  • Reduce the flame to a minimum and add a tbsp of yogurt to this and blend well. Do so with the remaining yoghurt until they have blend well while frying for 3 min.
  • Pour sufficient water to cover the meat, cover and simmer for an hour or until the meat is tender. Check at regular intervals to keep the meat from burning.
  • Once the meat is cooked, uncover and fry until the water is absorbed. This delicate duck dish is ready to be served.
